Marathon Brain

WY I RUN... to quiet the brain which is hard during taper time where Marathon Brain is at its peak; paces, numbers, turns and hills...

Workouts:
11/12: 8 Miles, 4 Miles and Easy Swim
11/22: Pilates and 10 Miles: 2 w/u, 6 MP, 2 c/d
11/23: Aqua Jog and Swim, 9 Miles
11/24:  10 Miles and Easy Cycle
11/25: OFF
11/26: Swim and 6 Miles
11/27: Easy Leg Spin, 7 Miles: 2 w/u, 3MP, 2 c/d

For a non-cook, I spent some time at the stove and oven on Friday and delivered (at least I thought so). I re-created my favorite dish from Tuscany last year, their signature, Ribolita
Runner's World sparked my creation which was adapted from this recipe.

Italians make ribollita, which means "reboiled," from leftovers and cook the soup twice before eating. Make it with whatever light-colored beans you have on hand.

2 cups cannellini (or any white bean), drained and rinsed
1/2 cup extra-virgin olive oil
1 tablespoon fresh garlic, chopped
1 tablespoon fresh rosemary, chopped
1 large onion, chopped
1 carrot, peeled and chopped
1 large Yukon gold potato, diced
2 celery ribs, chopped
1 bunch kale, chopped roughly
1 cup canned tomatoes, chopped
2 cups chicken stock
3 slices day-old, crusty white country bread
Grated Parmigiano-Reggiano (optional)

I also used up some of my many Sweet Potatoes by baking Sweet Potato Raisin Walnut Scones... to die for.


Sweet Potato Scones, makes 8 scones, adapted from this recipe
-2 1/4 cup whole wheat flour (I found a new sprouted whole wheat flour at Whole Foods and it’s true love)
-1 t baking powder
-1 t baking soda
-1/2 t salt
-1 t cinnamon
-1 c mashed, cooked sweet potato (a little less than one medium sweet potato)
-1/2 c coconut oil, plus 1 T for brushing over the tops of the scones
-1 t vanilla
-1/4 cup maple syrup
-optional: 1/2 cup add-ins Raisins and Walnuts

Mix Dry Ingredient, then mix wet and add. 7 inch Diameter about an inch thick with 8 pieces. Preheat over 350F for 18 min.




Running flew by on Friday as I listened to a tweeted BBC Podcast 5 Live Sports Specials. The episode focused on body image within the athletic world, not only did it hit close to home, but is eye opening for those foreign to this world.
